Coconut Yogurt

Missing yogurt? Try making your own coconut yogurt:

Ingredients:
Flesh of 1 young coconut
1/2 cup raw cashew nuts, unsalted
1/3 cup coconut water
1 tsp maple syrup
pinch of salt

Method:
1. Open the coconut, drain the water and reserve 1/3 cup
2. Scoop out the flesh using a spoon
3. Combine the coconut and water with the cashews, maple syrup and salt to taste.  Blend until the mixture is smooth.
